Ingredients

  • 4 Cups Rolled Oats
  • ½ Cup Brown Sugar
  • 1 Cup Unsweetened Shredded Coconut
  • ½ Cup Maple Syrup or Agave Nectar
  • ¼ Cup Unfiltered Apple Juice
  • I Ripe Banana

    Optional Additions

  • Silvered Almonds
  • Chopped Cashews
  • Pine Nuts
  • Golden Raisins
  • Dried Goji Berries
  • Currants

Cooking Instructions

  • 1. Heat oven to 300 degrees.
  • 2. In a large bowl, combine oats, brown sugar and coconut.
  • 3. In a blender.combine maple syrup, apple juice and banana. Process until smooth.
  • 4. Add the contents of the blender to the bowl and stir. You may have to add another splash of apple juice if the granola seems too dry.
  • 5. Spread mixture evenly onto a cookie sheet lined with parchment or waxed paper, then bake for 45 minutes.
  • 6. Add any combo of the optional ingredients if desired. Stir granola, and bake for an additional 10-15 minutes or until granola is desired shade of brown. Allow to cool completely.
