2. In a large bowl, combine oats, brown sugar and coconut.
3. In a blender.combine maple syrup, apple juice and banana. Process until smooth.
4. Add the contents of the blender to the bowl and stir. You may have to add another splash of apple juice if the granola seems too dry.
5. Spread mixture evenly onto a cookie sheet lined with parchment or waxed paper, then bake for 45 minutes.
6. Add any combo of the optional ingredients if desired. Stir granola, and bake for an additional 10-15 minutes or until granola is desired shade of brown. Allow to cool completely.
