Rub steaks with salt, pepper and a sprinkle of sugar. Add a dash of coriander, then heat in a lightly oiled pan on a medium to high heat.
Sear the steaks in the hot pan. After second side has been seared, turn the heat to medium and cook to desired degree of doneness, normally about 10-12 minutes in total. Let rest for a few minutes while you grill the bread.
Brush both sides of the bread with butter or oil. Grill in hot pan or under broiler until both sides are crisp.
Prepare the steak with grilled bread, tomato jam, with a garnish of dish and crumbled cheese.
Then squeeze the lemon over the steak and add freshly ground black pepper if required.
