Ingredients

  • 1 whole roasting chicken
  • 1/4 cup olive oil, divided use
  • 1 cup coarsely chopped carrots
  • 1 onion, cut into large chunks
  • 4-6 garlic cloves, peeled and crushed
  • 1/2 cup chopped fresh parsley

Optional Additions

  • Large chunks of potatoes, beets, parships and turnips

Cooking Instructions

  • Heat Oven to 350 degrees
  • Brush the chicken with olive oil, then coat thoroughly with salt and pepper.
  • Place chicken in deep roasting pan.
  • In a bowl, combine carrots, onions, garlic and parsley. Add remaining olive oil to coat all surfaces, along with coarse salt and pepper to taste. Transfer vegetables to the pan alongside the chicken. Wrap in foil and let cook for 1 hour.
  • Remove foil and stir vegetables. Then spoon the remaining fat over the chicken. Replace the foil and let cook for 20 minutes.
  • Remove the foil and roast the chicken uncovered until it has cooked through thoroughly for about 90 minutes in total. The chicken should be tender to touch and the juices should run clear
